Ingredients

Spinach , cleaned 4 Ounces
Water chestnut , cut into small pieces 2 Ounces
Olive oil (plum sauce dressing) 2 Tbsp
Bacon , cooked, cut into small pieces 4 Slices
Black pepper , for taste (plum sauce dressing) 1 Pinch
Lime juice (plum sauce dressing) 4 Tsp
Pineapple juice (plum sauce dressing) 4 Tbsp
Eggs , hard-boiled, removed shell, cut into small pieces 2 Whole
Ginger , finely minced (plum sauce dressing) 2 Tsp
Red onion , thinly sliced 2 Ounces
Plum Sauce (plum sauce dressing) 4 Tbsp


Dressing

Plum Sauce (plum sauce dressing) 4 Tbsp


Directions
1.   Combine all ingredients in a mixing bowl. Refrigerate for 30 minutes.
2.   Drizzle plum sauce dressing over baby spinach. Serve.
