Zucchini, removed ends, cut into long strips 1 Small
Eggplant, soaked in water and salt, cut into round pieces 1 Small
Mayonnaise 4 Tbsp
Olive oil 2 Tbsp
Red bell pepper, removed seeds and ends 1 Whole
Salt and pepper, for taste 1 Pinch
Red onion, peeled, cut into rounds 1 Small
Sourdough bread 4 Pieces
Lee Kum Kee Chili Garlic Sauce 1 Tsp
Lee Kum Kee Hoisin Sauce 1 Tbsp

Lee Kum Kee Chili Garlic Sauce

1.   In a small mixing bowl, combine Lee Kum Kee Hoisin sauce, Lee Kum Kee Chili Garlic Sauce and mayonnaise. Mix well and refrigerate
2.   Combine the remainder of the ingredients on a tray and season with salt and pepper.
3.   Drizzle olive oil on top of vegetables and grill for 2 minutes on each side.
4.   Assemble sandwich and serve.
