Toban Fish Fillet

flounder fillet 12 oz.
bok choy heads 6
beaten eggs 2
garlic cloves, minced 3
ginger slices 2
water 4 oz.

Seasoning Mix

cooking wine 1 Tbsp.
Salt 1 tsp.
cooking oil 3 Tbsp.
white pepper, ground 1 tsp.

1.   Rinse bok choy and place into boiling water for 30 seconds, drain, and set aside.
2.   Heat 3 Tbsp. cooking oil in a wok. Coat fillet with beaten eggs, fry until golden brown.
3.   Add garlic and ginger to wok, stir-fry for 30 seconds. Add chili bean paste, water, and bring to boil. Add fish fillet and simmer for about 2 minutes. Sprinkle with ground pepper, pour Lee Kum Kee Pure Sesame Oil over top.
4.   Circle the dish with the bok choy, placing the flounder fillet at the center. Ready to serve.
