Stewed Beef with Soybean Sauce

beef brisket 2 lb.
fried bean curd 10 oz.
bamboo shoots 6 oz.
dried Chinese black mushrooms, soaked 5 pcs.
ginger, sliced 6 oz.
star anise 2 pcs.
dried red peppers, chopped 2
cinnamon bark 1 pc.
garlic cloves, whole 5
green onions, chopped 4
cooking wine 3 Tbsp.
oil 3 Tbsp.
cold water 10 cups
hot water 6 cups

Seasoning Mix

Seasoned Soy Sauce 3 Tbsp.
Soybean Sauce ¼ cup

1.   Cut beef into cubes, rinse with water, drain, and place in pot. Add cold water, ginger, star anise, cinnamon, 2 green onions, and boil over high heat. Reduce to low heat and simmer 1 hour. (Skim off the froth while boiling.)
2.   In a separate pan, heat oil and stir-fry garlic with remaining 2 green onions. Add these to pot with meat and stir for 2 minutes. Add cooking wine, soybean sauce, seasoned soy sauce, and keep stirring for 2 minutes over medium-low heat. Add bamboo shoots, mushrooms, and fried bean curd.
3.   Add hot water to mixture. Bring to boil, reduce to low heat. Cook until mixture has thickened.
