Ingredients

Eggplant(s) 1 whole [removed ends, sliced ½" pcs]
yellow squash 2 pcs [sliced diagonally ½" pcs]
olive oil 2 tbsp
seasoned vinegar 2 tbsp
feta cheese 4 oz
red bell peppers 2 whole [washed, roasted, sliced]
black pepper 1 pinch [for taste]
basil 2 tbspchopped
Calamata olives 2 tbspchopped


Marinade

Kum Chun Soy Sauce 4 tbsp
Pure Sesame Oil 1 tbsp


Directions
1. In a small mixing bowl, combine the first 5 ingredients. Whisk well and set aside.
2. In a large bowl, combine squash and eggplant. Drizzle olive oil and toss well.
3. Grill vegetables according to preference.
4. Arrange grilled vegetables in a platter. Serve with the remainder of ingredients.
