Apple Crepe with Plum Sauce

brown sugar 5 Tablespoons
cornstarch 1 cup
flour 2 Tablespoons
salt 1 pinch
apples 5 whole
water 1 cup
eggs 4 whole
cooking oil 1 /4cup
butter 2 Tablespoons
rum 2 Tablespoons
Plum Sauce 5 Tablespoons

  1. In a heated pan, add butter and apples. Cook for 5 minutes.
  2. Stir in brown sugar, Plum Sauce, salt and rum. Bring mixture into a boil. Simmer for 15 minutes and cool in refrigerator.
  3. Combine all crepe ingredients in mixing bowl. Mix well until batter is smooth (crepe mixture). Refrigerate for 1 hour before use.
  4. In a heated non-stick pan, drizzle a few drops of oil. Pour 1 ounce of crepe mixture into the pan. Swirl crepe mixture in pan to create round thin shape. Cook mixture for 30 seconds (no need to flip over).
  5. Spoon apple into the crepe and fold twice to wrap. Serve with cut up season fruits and Plum Sauce as desired.
