Sriracha Mayo

INGREDIENTS:

2 rib-eye steaks, 10-12 oz. ea         
2 tsp. kosher salt
1/4 tsp. black pepper, freshly ground preferred
1 bell pepper ( red or yellow), sliced
1 onion, sliced
3 tbsp. olive oil 
2 tsp. lemon juice
1 cup Lee Kum Kee Sriracha Mayo
4-6 slices bread (sourdough or wheat)
8-12 slices Swiss cheese

DIRECTIONS: (1) Season steak with salt and pepper, let stand for at least 5-10 minutes before cooking. (2) In a pan over medium heat, add 2 Tbsp. olive oil, peppers, onion and season with salt & pepper. Cook until caramelized (when onion and peppers are soft and sweet). (3) Remove caramelized onion and peppers from pan, allow to cool. Reserve half for garnish. Chop the other half into pea-sized pieces. (4) Mixed chopped onion and peppers with Sriracha Mayo and lemon juice to to make the spread, set aside. (5) Place a large pan over medium-high heat. When pan is hot, add remaining olive oil, add steak. Cook steak for about 4 minutes on each side. (6) Remove steak, allow to cool for 5 minutes before slicing it thinly. (7) Toast bread, smear Sriracha Mayo spread onto one side, add sliced steak, cheese, and top with reserved caramelized onion-and-pepper mix. (8) Preheat oven or toaster oven to 350F, place assembled sandwich into oven for about 3 minutes or until cheese has melted. Bake longer to cook the steak more if desired.
